The Best Bakery-Style Berry Muffins

Berry Muffins


Bake up these moist delicious berry muffins with your favorite berries or add a mixture of berries for a medley of yumminess.



 Ingredients:

1/2 cup butter, softened

3/4 cup sugar

1 egg

2 cups flour (I substitute 1/2 to 1 cup with Whole wheat flour as I like the nutty flavor it adds)

2 tsp baking powder

1/2 tsp salt

1/2 cup milk

1/2 tsp vanilla

1 1/2 cups chopped strawberries or other berries (fresh or frozen)


Topping:

3 tsp sugar

1/2 tsp cinnamon



Directions:

Cream butter and sugar. Add egg and mix well. (melt butter some if not soft)

Sift flour, baking powder, and salt in a small bowl. Add flour mixture and milk alternately to butter mixture.

Add vanilla. Gently stir in strawberries.

Rest batter for 15 minutes.

Spoon batter into muffin pans. Use only every other cup so muffins have lots of room to expand.

Combine sugar and cinnamon topping and sprinkle over muffins.

Bake at 425° for first 7 minutes then 350° for remaining 13 to 15 minutes.

Makes 8 large muffins.
