Chewy Cafe-Style Chocolate Chip Cookies
I made many tries, looking for just the right texture cookie . And this recipe is the result and gives you the chewy center, with just crisp edging and of course, loads of chocolate chips!
Pre-heat oven to 325° F
Ingredients
2 cups + 2 tablespoons all-purpose flour *
1 teaspoon baking soda2 teaspoons cornstarch
½ teaspoon salt
butter, melted and cooled
1 cup brown sugar, lightly packed
½ cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1½ cups chocolate chips (I do half semi-sweet, half milk chocolate)
* I often do half white and half whole wheat flour, I find it gives a nuttier flavour to cookies.
Directions
2. In a large bowl, mix together the cooled melted butter and the sugars. Then, add in the eggs and vanilla extract. Mix until just combined.
3. Slowly add in the dry ingredients and mix, just until there are no flour clumps left.
4. Fold in the chocolate chips
5. Scoop heaping tablespoons onto a baking sheet lined with parchment paper, or greased one, making sure the cookies have plenty of space to spread.
6. Bake for about 12 to 14 minutes, or until the cookies have spread out and the edges are golden, but the center of the cookie still looks soft and just slightly under-cooked. Let cool on the baking sheets for 3 minutes, until the cookies are firm enough to remove to a cooling rack.
